HA! Funny picture! My husband makes a yummy spaghetti sauce with chunks of zucchini and other squash in it. I can't think of any other recipes now though...what's your favorite?
Personally, I'm sick and tired of Zucchini by now. I love it for about two weeks--fried, bread, etc. But then I give it away or shred it, place it in ziploc bags, and stuff it in the freezer. This is a cute, cute post, though. Carving the Zucchini is a good use for it, too. :)
You can make quite a lovely side dish by sauteing the zucchini in some olive oil with some roughly chopped onion. Then when they are tender, add a splash of lemon juice and a handful of raisins and serve when the raisins have absorbed some of the liquid and become soft and juicy. (Can be served hot, lukewarm or at room temperature, depending on your mood... And yes, it can also be made in advance and kept in the fridge overnight without problems.)
I bet you could also make use them as a replacement for aubergines in melanzane parmigiana if you want to do something more elaborate with them...

ReplyDeleteSo cute! I like zucchini slices sauteed with garlic, tomatoes, and oregano. I also use them in casseroles.

ReplyDeleteVery cute! I make zucchini bread and it is never around long since my family and friends gobble it up in no time! It freezes well too.

Very funny!! Aren't zucchini this big kind of seedy? Maybe you could grab a few onions and play baseball with them!
